Gluten Free Tiramisu Recipe

Ingredients:

1 bag of GF coconut cookies or vanilla cookies

1/2 cup of espresso

1 container of mascarpone cheese

powdered sugar (or honey and stevia) to taste

1-2 organic eggs

5 spoonfuls of cocoa powder

 

To make:

Separate the yolks and whites of eggs and beat the whites until soft. Mix yolks and sugar into the mascarpone. Fold in the whipped very carefully to not lose the volume.

Layer the gluten-free cookies in a ceramic pan

Pour half of the espresso over the cookies until lightly saturated

Spread the mascarpone mix over the cookies

Place another layer of cookies on top of the mascarpone, and lightly saturate with the coffee again

Spread another layer of the mascarpone on top

Place in fridge for two hours and then dress with cocoa powder
